Mixing processes where liquids need to be introduced into a powder batch are even more complicated.

One advanced solution to these challenges is the Vitomix, a mid-shear mixer developed by Hosokawa Micron. It offers a flexible approach to mixing, capable of performing both gentle, low-shear mixing and more intensive mid-shear mixing, significantly reducing mixing time. Seamless Liquid Addition

A key advantage of the Vitomix is its versatility. In industrial processes, different types of mixers are often required depending on the properties of the materials and the desired outcome. After introducing a liquid with mid-shear mixing, a secondary low-shear mixing process may be needed for fragile materials. The Vitomix can perform both functions, enabling the gentle mixing of delicate components without compromising product structure.

The Vitomix builds on the principles of the Nauta® mixer but employs a different screw configuration and higher rotational speeds. This setup creates a fluidized bed at the top of the mixer, where liquids can be introduced seamlessly. The result is a perfect balance between liquid, powder, and air, producing a homogenous mixture without lumps, even when high percentages of liquids, fats, or oils are added.

For example, tests involving the injection of sunflower oil (up to 20% w/w) into bakery flour and the injection of melted butter (over 30% w/w) into a flour and egg powder mixture resulted in a smooth, lump-free mixture with no sign of dough formation. The timed trials demonstrated that the fluids were fully incorporated into the mixture after only eight minutes.

Efficient and Compact Design

The Vitomix's compact, partially conical design – unlike the fully conical Nauta mixer – allows it to handle the same mixing volume while its high-speed, large-diameter double ribbon screws ensure a faster and more efficient mixing process, even at low linear speeds. Without using lump breakers, delicate materials remain intact, making the Vitomix an ideal choice for liquid injection into powder mixtures.

The Vitomix stands out for its energy efficiency. Its ability to produce liquid/powder mixtures without lump breakers and its rapid mixing times make it far more efficient than other equipment. Additionally, the compact design of the Vitomix allows it to be used in environments with restricted structural height, without sacrificing mixing volume. Available in eight standard sizes, ranging from 500 to 13,000 litres, the Vitomix is suitable for a wide range of applications and throughput capacities.

Lump-Free Paste Production

The Vitomix excels in applications requiring paste production or the homogenization of both cohesive and non-cohesive powders. It is also well-suited for sensitive products like brittle granules or freeze-dried materials. The Vitomix has successfully handled notoriously difficult tasks, such as mixing water with guar gum and Na-CMC, without forming lumps.
